How to make Clever Dripper coffee

18 g of coffee to 300 ml of water at 94 °C, ground medium. Ready in about 3 minutes 30 seconds.

Recipe

A dripper with a valve: the coffee steeps like a French press, then drains through a paper filter when you open it. The Hario Switch works the same way. Easy to repeat, with a clean cup.

Steps

  1. Heat water to 94 °C, with a little extra for rinsing.

  2. Put a paper filter in the dripper, rinse it with hot water over a cup and pour that water away.

  3. Close the valve: stand a Clever on the counter, or close the switch on a Hario Switch.

  4. Grind 18 g of coffee medium.

  5. Set the dripper on scales and zero them. Start a timer, pour in 300 ml of water, then add the coffee: water first keeps the grounds from clogging the filter.

  6. Stir gently until all the grounds are wet, then put the lid on.

  7. At 2:00, stir gently again so the crust on top sinks.

  8. At 2:30, set the Clever on your cup or server, or open the Switch, and let it drain.

  9. It should finish at about 3:30. Swirl the coffee and serve.
