How to make Chemex coffee
30 g of coffee to 500 ml of water at 94 °C, ground medium-coarse, with a 45-second bloom. Ready in about 4 minutes 30 seconds.
Recipe
An hourglass-shaped glass brewer with a thick paper filter that holds back oils and fine particles. The cup is very clean, light and sweet.

Steps
Heat water to 94 °C, with a little extra for rinsing.
Unfold a Chemex filter and set it in the top, with the thick, three-layer side against the spout.
Rinse the filter all over with hot water, then pour that water out through the spout, keeping the filter in place.
Grind 30 g of coffee medium-coarse, add it to the filter and shake gently so the bed is flat.
Set the Chemex on scales and zero them. Start a timer and pour 60 ml of water, just enough to wet all the grounds.
Let it bloom until 0:45.
Pour slowly in small circles to 250 ml by 1:30.
When the level has dropped a little, pour to 500 ml by 2:30, keeping the water below the rim of the filter.
Let it drain. It should finish at about 4:30: grind finer next time if it runs faster, coarser if slower.
Lift out the filter, swirl the coffee and serve.
