Steps

  1. Heat water to 85 °C, with a little extra for rinsing.

  2. Put a paper filter in the cap, rinse it with hot water and screw the cap onto the chamber.

  3. Stand the AeroPress on a sturdy mug on scales and zero them. Grind 18 g of coffee fine, add it to the chamber and shake it level.

  4. Start a timer and pour in 240 ml of water quickly, wetting all the grounds.

  5. Stir a few times, then fit the plunger just inside the top of the chamber, so no coffee drips through while it steeps.

  6. At 1:30, hold the mug and the AeroPress together and give them a gentle swirl.

  7. Press the plunger down slowly and steadily, finishing at 2:00. Stop when you hear a hiss.

  8. Lift off the AeroPress, stir the coffee and serve.
